Late Harvest Sauvignon Blanc, Valle de CuricÌ_ 37.5 cl, Vi̱a EcheverrÌ_a

A rich and textured dessert wine showing complex flavours of ripe pineapple and creamy honeyed flavours with a long finish.
The bunches were hand harvested and then carefully selected. Whole cluster pressing took place with a 48 hour static sedimentation prior to fermentation. The grapes were then fermented with selected yeasts at a constant temperature of 18å¡C in stainless steel tanks for 45 days. The wine was then transferred to French oak barrels for moderate ageing.
