Vin Santo del Chianti, Bonacchi

A traditional Tuscan sweet wine with heady aromas of toffee and caramel.
The grapes were harvested and the bunches were then hung up to dry for about 2 months in well-ventilated rooms. The carefully selected dried grapes were pressed and the must put into small oak barrels (known as caratelli). The barrels are not filled to the top to allow oxidation to occur. After oxidation the barrels are filled to make them airtight and the Vin Santo is left to age for a period of about 5 years.
