Chassagne Montrachet 1er Cru En Virondot, Domaine Marc Morey

A rich, concentrated and complex wine with excellent focus and cool minerality to balance the opulent palate.
The fruit was carefully sorted to ensure only the top quality fruit was vinified. Fermentation started in temperature controlled stainless steel vats where malolactic conversion took place. The fermenting wine was transferred to barrel halfway through where fermentation was completed. The wine was then aged in French oak barrels, of which 20 to 25% were new; the barrels are used for four years before being replaced and only those of medium toast, so as not to overpower the wine and to retain the character of the terroir.
