Daily pumping over took place, in conjunction with rack and returns of the wine, to obtain the desired level of extraction of flavour, colour and structure to the wine. Malolactic fermentation occurred spontaneously after the alcoholic fermentation. The wine was matured in large oak barrels, adding complexity to the resulting wine.
