Cornas, La Sabarotte, Domaine Courbis

The epitome of fine and maturing Cornas, rich and intense with layers of meaty and gamey flavours with herbal notes, a beautiful combination of power and elegance.
The grapes were hand harvested, destemmed and lightly pressed. Vinification took place in sealed stainless steel tanks at controlled temperatures of between 30 to 32å¡C. The maceration lasted three weeks during which time the desired levels of colour, flavour and fine tannins were extracted. The wine underwent a malolactic fermentation in barrel and was aged in oak barrels, of which 60% were new, for approximately 18 months. The wine was filtered prior to bottling.
