Cornas, La Sabarotte, Domaine Courbis

The epitome of fine Cornas showing chocolate and smoky fruit intensity with a silky suppleness on the palate .
The grapes are hand harvested, destemmed and lightly pressed. Vinification takes place in sealed temperature controlled stainless steel tanks at 30-32C. Maceration lasts 3 weeks and maximum colour is extracted. Aged in oak barrels, part new.
