Made from hand-picked old vine fruit. All the parcels were fermented separately. Mataro and Grenache were allowed to get a bit warmer during the fermentation, to reduce the risk of confected notes. This also helped to preserve the savoury characteristics of the Grenache. Open fermentation took place over seven days below 25å¡C with manual pump-overs twice daily. The wine was pressed through a slotted screen beg press to oak, where it spent 18 months barrel ageing in seasoned French and American oak hogsheads.
