Nebbiolo d'Alba 'Brumo', San Silvestro

Medium garnet in colour, this wine displays savoury and rustic notes of liquorice and leather typical of the Nebbiolo grape with a characteristic dry finish.
The grapes were carefully sorted, gently crushed and destemmed prior to fermentation in stainless steel tanks at a controlled temperature of 28 to 30å¡C. Maceration on the skins lasted 10 days, with daily pump-overs of the cap, ensuring good extraction of colour and flavours. The wine was aged for 12 months in large Slavonian oak casks, imparting complexity and rounding out the tannins.
