Nero d'Avola 'The Dark Prince', Adelaide Hills, Fox Gordon

Opulent yet silky, this delicious wine displays juicy cooked cherries and fresh raspberries with notes of spearmint through to a peppery and full finish.
The grapes were destemmed and the underwent a cold soak for one week. Fermentation took place in stainless steel and lasted for two weeks. The wine was then transferred to two and three year old French oak barrels for a period of 12 months, adding subtle oak complexity. The wine was bottled unfiltered.
