The grapes were destemmed to reduce the levels of tannins in the resulting wine, pressed and macerated to extract aromatics, flavour and fine tannins. Fermentation took place with selected yeasts in temperature controlled stainless steel tanks. The wine was kept in tank until bottled, preserving the fruity characteristics of Pinot Noir.
