Pinot Noir, 'Estate', Mornington Peninsula Magnum, Paringa Estate

A breathtaking Pinot with extraodinary texture and elegant power reminiscent of top Chambolle Musigny.
The grapes were 100% destemmed and cold soaked for one to two days. Each two-tonne open fermenter was hand plunged three times per day. Several days of post-fermentation maceration took place and then the wine was pressed to tank and to barrel for a malolactic fermentation. 50% of the wine was aged in new French oak barriques and 50% in 1st and 2nd use barrels for 10 months.
