Tempranillo Cabernet Merlot 'Ars Nova', Navarra, Tandem

An warmly flavoured wine overflowing with dark fruit flavours, mocha and hints of capsicum.
Fermentation took place at controlled temperatures of 28å¡C, during which a slow extraction took place with cap submersions to achieve the desired levels of colour, flavour and fine tannins. Pumps were not used during the fermentation process, instead racking was by gravity into concrete vats. Malolactic fermentation occurred and natural clarification took place by decanting into concrete vats. The wine was not cold stabilised or fined. It then spent a minimum of 24 months in concrete vats, followed by nine months ageing in French 300 litre oak barrels.
