The grapes were meticulously sorted to ensure only the highest quality fruit was vinified. Fermentation took place in stainless steel tanks and the wine was transferred into French oak casks, of which 25% were new, with b̢tonnage of the fine lees adding complexity and texture until the completion of malolactic conversion. Racked after 10 months in barrel, the wine was gently fined and filtered prior to being estate bottled by gravity.
