The juice was immediately extracted by delicate pneumatic pressing, cooled and left to settle before fermentation began. 75% was fermented in 225 litre French oak barrels, the remainder in vat to retain the purity of fruit. The wine was matured on its fine lees in oak barrels for six months where it underwent full malolactic conversion.
