An explosively aromatic wine showing intense notes of passion fruit through to a herbaceous and white pepper finish with notes of wild sage.
The selected grapes were slowly and gently pressed to obtain the highest quality must. It was vinified at 20å¡C and did not go through malolactic fermentation. The wine was matured in 500 litre, old, wooden vats for a period of nine to 12 months, with regular stirring of the lees to impart texture and complexity.
