Riesling 'Laissez Faire', Great Southern, Larry Cherubino

A funky lemon and lime sherbet style dry Riesling. Very fresh and crisp with layers of waxy stone fruit and floral notes finishing on a lovely almost toasty note.
With a focus on natural winemaking, this was made in small batches from hand-harvested grapes. The fruit was whole bunch pressed. The juice was then settled without the addition of enzymes, sulphur or acid. Once settled, it was allowed to ferment naturally at a low temperature for six weeks.
