Semillon Sauvignon Blanc 'Pedestal', Margaret River, Larry Cherubino

This sophisticated and distinctively cool climate wine has flinty notes of asparagus and sage, zesty, vibrant and layered.
The Semillon and Sauvignon Blanc parcels were picked at maximum flavour maturity over several weeks, to ensure that all the various soil types and aspects of the vineyard were fully exploited. A combination of machine and hand harvesting was employed. Only the free run parcels were used after a gentle pressing. Fermentation took place at 11 to 13å¡C, with 60% of the juice being fermented in two year old oak, for two months before final blending.
