Pinot Noir, 'Estate', Mornington Peninsula, Paringa Estate

A breathtaking Pinot with an extraordinary velvety texture and elegant power enhanced by savoury and leather notes, reminiscent of top Chambolle Musigny.
The hand picked fruit was 100% destemmed and cold soaked for four days prior to the yeast inoculation. The wine spent a total of 21 days on skins in open stainless steel fermenters with gentle plunging. Post fermentation, the wine was aged for 11 months in French oak barrels, of which 35% were new.
