Careful selection of the fruit as it enabled winemaker Javier to perform long periods of maceration, in order to ensure good extraction of tannins, aroma and flavour components. Each grape variety was fermented separately in vats at controlled temperatures of between 28 to 30å¡C. The wine was racked into large American oak vats before being left to age for 18 months in oak casks. After bottling, the Reserva was bottle aged in the cellar to develop its bouquet and harmonious character.
