Ventoux Blanc 'Les Gressannes', Domaine de Champ-Long

Complex aromas of stone fruits, gingerbread and buttery, toasted notes enhance the rich palate through to a lovely spicy finish.
Manually harvested, the best grapes were then meticulously selected for this cuvÌ©e. The grapes were destemmed, crushed, macerated and gently pressed in a pneumatic press, prior to a cold static settling at 10-12å¡C for 24 to 36 hours. Fermentation took place in 400 litre French oak barrels, of which 40% were new, 40% were one year old and 20% were two year old oak; with regular lees stirring. The wine was then aged for eight months.
